  • 8 rice paper wrappers
  • 2 cups fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 2 tablespoons fresh dill, chopped
  • 1 medium onion, diced
  • ¼ cup toasted pine nuts
  • 2 tablespoons extra virgin olive oil (plus more for brushing)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Prepare a baking sheet by greasing it lightly.
  2. In a skillet over medium heat, add olive oil and sauté the diced onion until translucent (about 3 minutes). Add chopped spinach and cook until wilted (about 2 minutes).
  3. Remove from heat and stir in feta cheese, dill, salt, pepper, and toasted pine nuts.
  4. Soak each rice paper wrapper in warm water until pliable, then place flat on your work surface.
  5. Spoon a small portion of filling onto the bottom third of each wrapper. Fold in the sides and roll tightly.
  6. Place filled wrappers on the prepared baking sheet, brush tops with olive oil, and bake for 20-25 minutes or until golden brown.
