- 2 cups fresh rhubarb, chopped
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1 cup rolled oats
- 1/4 teaspoon salt
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish.
- In a bowl, mix flour, granulated sugar, and salt. Cut in cold butter until crumbly.
- Stir in oats to the mixture until it's sticky yet crumbly.
- Press half of the crumble into the bottom of the prepared dish. Layer with chopped rhubarb and drizzle lemon juice over it.
- Sprinkle the remaining crumble on top of the rhubarb layer.
- Bake for 40-45 minutes until golden brown. Cool before cutting into squares.
