Description

Rhubarb Crumble Bars are a sweet and tangy dessert that perfectly marries the tartness of fresh rhubarb with a buttery, crumbly topping. Ingredients

  • 2 cups fresh rhubarb, chopped
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup rolled oats
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  2. In a bowl, mix flour, granulated sugar, and salt. Cut in cold butter until crumbly.
  3. Stir in oats to the mixture until it's sticky yet crumbly.
  4. Press half of the crumble into the bottom of the prepared dish. Layer with chopped rhubarb and drizzle lemon juice over it.
  5. Sprinkle the remaining crumble on top of the rhubarb layer.
  6. Bake for 40-45 minutes until golden brown. Cool before cutting into squares.
