  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp salt
  • 2 large eggs
  • ⅓ cup vegetable oil (or applesauce)
  • ⅓ cup milk
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line or grease a muffin tin.
  2. In a large bowl, whisk together flour, sugars, baking powder, cinnamon, and salt.
  3. In another bowl, mix pumpkin puree, eggs, vegetable oil, milk, and vanilla until smooth.
  4. Gradually combine wet ingredients into dry ingredients; fold gently until just mixed.
  5. Gently fold in the chocolate chips.
  6. Fill muffin cups about 2/3 full and bake for 18-20 minutes or until golden brown.
