  • 1 cup granulated sugar
  • 3.4 oz pistachio pudding mix (1 package)
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 large eggs, at room temperature
  • 2 tsp pure vanilla extract
  • 1 cup chopped roasted and salted pistachios

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy, about 3 minutes.
  3. Beat in the eggs one at a time, then add the vanilla extract, mixing until combined.
