  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup fresh pineapple, diced
  • 1 cup jasmine rice
  • ½ cup teriyaki sauce (store-bought or homemade)
  • 2 green onions, sliced thinly
  • 1 tbsp sesame seeds (toasted)
  • ¼ cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, grated

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Season chicken breasts with salt and pepper; place on the prepared baking sheet.
  3. In a bowl, mix soy sauce, brown sugar, garlic, and ginger until well combined. Pour half of this mixture over the chicken.
  4. Bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
  5. While the chicken bakes, prepare jasmine rice according to package instructions.
  6. Once cooked, fluff rice and let the chicken rest for 5 minutes before slicing it into bite-sized pieces.
  7. Serve by placing rice in bowls, topping with chicken pieces and pineapple chunks. Drizzle remaining teriyaki sauce and garnish with green onions and sesame seeds.
