- 2 tbsp all-purpose flour (or gluten-free flour)
- 2 tbsp olive oil
- 1 tbsp soy sauce or tamari
Instructions
- Heat olive oil in a large pot over medium heat. Add onions and sauté until translucent, about 5 minutes.
- Stir in minced garlic and carrots; cook for another 3-4 minutes until softened.
- Add button mushrooms and cook until they release moisture, around 6-8 minutes.
- Sprinkle flour over the mixture and stir well to coat. Cook for an additional minute.
- Gradually pour in red wine while stirring to deglaze the pot. Allow to simmer for 5 minutes.
- Add vegetable broth, thyme, and soy sauce; bring to a boil then reduce heat to low. Cover partially and simmer for 30 minutes until thickened.
