  • 1 lb button mushrooms
  • 1 cup dry red wine
  • 1 medium yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 2 cups vegetable broth
  • 2 sprigs fresh thyme (or 1 tsp dried thyme)
  • 2 medium carrots, sliced
  • 2 tbsp all-purpose flour (or gluten-free flour)
  • 2 tbsp olive oil
  • 1 tbsp soy sauce or tamari

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and sauté until translucent, about 5 minutes.
  2. Stir in minced garlic and carrots; cook for another 3-4 minutes until softened.
  3. Add button mushrooms and cook until they release moisture, around 6-8 minutes.
  4. Sprinkle flour over the mixture and stir well to coat. Cook for an additional minute.
  5. Gradually pour in red wine while stirring to deglaze the pot. Allow to simmer for 5 minutes.
  6. Add vegetable broth, thyme, and soy sauce; bring to a boil then reduce heat to low. Cover partially and simmer for 30 minutes until thickened.
