  • 34 lbs chuck roast
  • 1 oz ranch seasoning mix (1 packet)
  • 1 oz au jus gravy mix (1 packet)
  • 5 banana or pepperoncini peppers
  • 1 cup low-sodium beef broth
  • 2 tbsp butter
  • 2 large carrots, chopped
  • 3 medium potatoes, chopped

Instructions

  1. Sear the chuck roast in a skillet over medium-high heat for about 4 minutes on each side until browned.
  2. Sprinkle the ranch seasoning and au jus gravy mix evenly over the roast.
  3. In a slow cooker, layer chopped carrots and potatoes at the bottom, then place the roast on top. Pour in beef broth and add peppers.
  4. Cover and cook on low for 8 hours or high for 4-5 hours until fork-tender.
  5. Shred the beef in the pot and serve hot over mashed potatoes or in sandwiches with gravy.
