  • 10 Biscoff cookies (crushed)
  • 4 tbsp unsalted butter (melted)
  • 16 oz cream cheese (softened)
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs (room temperature)
  • 1/2 cup Biscoff spread

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix crushed Biscoff cookies with melted butter until combined. Press the mixture into lined muffin tins to form crusts.
  3. In another bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
  4. Fold in Biscoff spread and vanilla extract.
  5. Pour filling over crusts and bake for 20-25 minutes until set but slightly jiggly in the center.
  6. Allow to cool before refrigerating for at least 4 hours.
