  • 8 corn tortillas
  • 2 cups shredded rotisserie chicken
  • 1 cup refried beans (canned or homemade)
  • 2 cups shredded cheese blend (mozzarella and Oaxaca)
  • 1 cup green salsa (homemade or store-bought)
  • 1/2 cup sour cream (for serving)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Spread a thin layer of green salsa at the bottom of the dish, followed by a layer of corn tortillas.
  3. Add half of the shredded chicken, half of the refried beans, and one cup of shredded cheese on top.
  4. Repeat layers: another layer of tortillas, more salsa, remaining chicken, beans, and another cup of cheese.
  5. Cover with aluminum foil and bake for 25 minutes. Remove the foil during the last 10 minutes to achieve a golden topping.
  6. Let rest for 10 minutes before slicing. Serve with dollops of sour cream.
