- 2 medium sweet potatoes
- 1 cup chopped walnuts
- 1/4 cup pure maple syrup
- 4 oz cream cheese, softened
- 1 cup shredded sharp cheddar cheese
- 2 tsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Wash and dry the sweet potatoes, then pierce them several times with a fork.
- Bake the sweet potatoes directly on the oven rack for 45-60 minutes until tender.
- Let them cool slightly before slicing in half lengthwise. Scoop out most of the flesh, leaving about ¼ inch around the edges.
- In a mixing bowl, combine the scooped sweet potato flesh, cream cheese, walnuts, maple syrup, salt, pepper, and half of the cheddar cheese. Mix until creamy.
