  • 8 oz macaroni pasta
  • 4 cloves fresh garlic, thinly sliced
  • 1/3 cup extra virgin olive oil
  • 1 tsp red pepper flakes (adjust to taste)
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Boil salted water in a large pot. Add macaroni and cook until al dente (about 8-10 minutes). Reserve 1/2 cup pasta water before draining.
  2. In a skillet over medium heat, add olive oil and sliced garlic. Sauté until golden brown (about 1-2 minutes).
  3. Stir in red pepper flakes and reserved pasta water to create a sauce.
  4. Toss drained macaroni into the skillet with the garlic oil, mixing well for about 1-2 minutes over low heat.
  5. Remove from heat and stir in chopped parsley. Serve hot topped with freshly grated Parmesan.
