  • 1 lb lean ground beef
  • 2 cups cooked short-grain rice
  • 1 cup julienned carrots
  • 1 cup thinly sliced zucchini
  • 2 cups fresh spinach
  • 2 large eggs
  • 3 tbsp gochujang sauce
  • 1 tsp sesame oil (plus more for drizzling)
  • 2 tbsp low-sodium soy sauce
  • 2 green onions, chopped

Instructions

  1. Prep all ingredients: julienne carrots, thinly slice zucchini, and chop green onions.
  2. In a large skillet over medium heat, cook ground beef until browned; drain excess fat.
  3. Add carrots and zucchini to the skillet; sauté until tender-crisp. Stir in spinach until wilted.
  4. Cook rice according to package instructions.
  5. In a small bowl, mix gochujang with soy sauce and sesame oil.
  6. Assemble your bowl: layer warm rice at the bottom, top with cooked beef and veggies, finish with a fried egg.
