  • 1 lb ground beef (80/20)
  • 1/2 cup breadcrumbs
  • 3 garlic cloves, minced
  • 1/4 cup green onions, chopped
  • 1/3 cup Korean BBQ sauce (gochujang-based)
  • 1/2 cup mayonnaise
  • 2 tbsp sriracha (adjust to taste)
  • 1 tbsp lime juice

Instructions

  1. Preheat the oven to 400°F (200°C). In a large bowl, mix ground beef, breadcrumbs, minced garlic, chopped green onions, and half of the Korean BBQ sauce until just combined.
  2. Roll the mixture into one-inch meatballs and place on a parchment-lined baking sheet.
  3. Bake for 20 minutes or until golden brown and an internal temperature of 160°F (70°C) is reached.
  4. While baking, whisk together mayonnaise, sriracha, and lime juice for the dip.
  5. Once done, drizzle remaining Korean BBQ sauce over meatballs and toss gently to coat.
  6. Serve warm with the spicy mayo dip.
