  • 1 lb lean ground beef
  • 1/4 cup almond flour
  • 1 small onion (finely chopped)
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 cup sour cream
  • 1 cup low-sodium beef broth
  • 2 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix ground beef, almond flour, onion, garlic powder, oregano, salt, and pepper until well combined.
  2. Shape the mixture into 1-inch meatballs and place them on a parchment-lined baking sheet.
  3. In a skillet over medium heat, melt butter and brown the meatballs on all sides.
  4. Remove meatballs, then pour beef broth and sour cream into the skillet. Stir until smooth.
  5. Return meatballs to the skillet, cover, and simmer on low for about 15 minutes until cooked through.
  6. Serve hot over zoodles or cauliflower rice and garnish with fresh parsley if desired.
