  • 3 lbs oxtail
  • 2 tbsp brown sugar
  • 1 large sweet yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 1 tsp allspice (pimento)
  • 2 medium carrots, sliced
  • 1 Scotch bonnet pepper, whole (adjust to taste)
  • 4 cups low-sodium beef broth
  • 2 tbsp soy sauce (low-sodium preferred)
  • 2 tbsp cooking oil

Instructions

  1. Heat oil in a large pot over medium-high heat. Sear oxtails until golden brown on all sides (5-7 minutes).
  2. Add onions, garlic, and ginger; sauté until fragrant (2-3 minutes).
  3. Stir in brown sugar and allow it to caramelize slightly before adding thyme, allspice, carrots, and Scotch bonnet pepper.
  4. Pour in beef broth and soy sauce until oxtails are just covered; bring to a boil.
  5. Reduce heat to low and cover; simmer for about 2-3 hours until fork-tender.
  6. Serve over rice or mashed potatoes with sauce ladled on top.
