  • 34 lbs Beef Chuck Roast
  • 4 Carrots, chopped
  • 2 Yellow Onions, chopped
  • 4 Garlic cloves, minced
  • 1 cup Dry Red Wine
  • 2 cups Low-Sodium Beef Broth
  • 2 tsp Dried Oregano
  • 2 Bay Leaves
  • 2 tbsp Olive Oil

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Sear the beef chuck roast on all sides for about 4-5 minutes per side until browned.
  3. Remove the roast and sauté onions and garlic in the same pot until translucent (about 3 minutes).
  4. Deglaze the pot with red wine, scraping up browned bits; let simmer until reduced by half.
  5. Return the roast to the pot and add carrots, beef broth, oregano, and bay leaves. Cover tightly.
  6. Cook in the preheated oven for approximately 3 hours or until fork-tender.
  7. Let rest for at least 15 minutes before slicing.
