  • 3 lbs beef chuck roast
  • 4 medium carrots, chopped
  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 1 cup dry red wine
  • 2 cups beef broth
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Sear the Meat: Heat olive oil in a large pot over medium-high heat. Sear the beef chuck roast on all sides until golden brown.
  2. Add Aromatics: Remove the roast and sauté onions and garlic in the same pot until fragrant.
  3. Add Vegetables & Liquid: Stir in chopped carrots along with red wine and beef broth. Scrape up browned bits from the pot.
  4. Return Roast & Season: Place the roast back into the pot, season with salt, pepper, rosemary, and thyme. Cover tightly.
  5. Braise Away: Reduce heat to low and simmer for 3-4 hours until fork-tender.
  6. Serve & Enjoy: Let rest briefly before slicing; serve with mashed potatoes or crusty bread.
