- 1 cup fresh basil leaves
- 2 ripe heirloom tomatoes, diced
- 8 oz burrata cheese
- 2 tbsp extra virgin olive oil (plus more for cooking)
- 4 garlic cloves, minced
- Salt and pepper to taste
- 1 cup panko breadcrumbs
- Juice of 1 lemon
- ½ cup freshly grated parmesan cheese
Instructions
- Preheat oven to 400°F (200°C).
- Butterfly the chicken breasts for even cooking.
- Prepare the breading by combining panko breadcrumbs and parmesan in one bowl; whisk eggs with salt and pepper in another.
- Dip each cutlet in egg, then coat with the breadcrumb mixture.
- Heat olive oil in a skillet over medium heat. Sear chicken cutlets for about 3-4 minutes per side until golden brown.
- In a bowl, mix diced tomatoes with basil, olive oil, lemon juice, salt, and pepper.
- Place cooked cutlets on a baking sheet, top with tomato mixture and tear pieces of burrata over them. Bake for an additional 5 minutes until burrata is warmed.
