  • 4 boneless, skinless chicken breasts
  • 1 cup fresh basil leaves
  • 2 ripe heirloom tomatoes, diced
  • 8 oz burrata cheese
  • 2 tbsp extra virgin olive oil (plus more for cooking)
  • 4 garlic cloves, minced
  • Salt and pepper to taste
  • 1 cup panko breadcrumbs
  • Juice of 1 lemon
  • ½ cup freshly grated parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Butterfly the chicken breasts for even cooking.
  3. Prepare the breading by combining panko breadcrumbs and parmesan in one bowl; whisk eggs with salt and pepper in another.
  4. Dip each cutlet in egg, then coat with the breadcrumb mixture.
  5. Heat olive oil in a skillet over medium heat. Sear chicken cutlets for about 3-4 minutes per side until golden brown.
  6. In a bowl, mix diced tomatoes with basil, olive oil, lemon juice, salt, and pepper.
  7. Place cooked cutlets on a baking sheet, top with tomato mixture and tear pieces of burrata over them. Bake for an additional 5 minutes until burrata is warmed.
  8. Serve immediately garnished with extra basil.
