  • 1 cup long-grain basmati rice
  • 1/4 tsp saffron threads
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 1 tsp ground turmeric
  • 1 cinnamon stick
  • Salt and pepper to taste
  • 2 tbsp olive oil or butter
  • Fresh herbs (like parsley or dill) for garnish

Instructions

  1. Combine chicken thighs with garlic, onion, turmeric, salt, pepper, saffron water (soaked in warm water), and olive oil in a bowl. Let it sit for at least 30 minutes.
  2. Heat olive oil in a large pot over medium heat. Add the chopped onions; cook until golden brown (about 5 minutes).
  3. Add marinated chicken thighs to the pot. Cook until browned on both sides (around 4-5 minutes per side).
  4. Stir in rinsed basmati rice along with enough water or broth to cover it, adding the cinnamon stick. Bring to a gentle boil.
  5. Reduce heat to low, cover tightly, and let simmer for about 20-25 minutes until rice is fluffy and liquid is absorbed.
  6. Fluff rice gently with a fork; remove cinnamon stick if visible. Sprinkle fresh herbs on top before serving.
