  • 2 cups sweet potatoes (cubed)
  • 4 cups mixed greens (arugula and spinach)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (sliced)
  • 1/2 red onion (thinly sliced)
  • 3 tbsp honey
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1/2 cup feta cheese (crumbled, optional)

Instructions

  1. Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, salt, and pepper on a baking sheet.
  2. Roast sweet potatoes for 25-30 minutes until golden brown and tender.
  3. While sweet potatoes roast, wash and dry mixed greens in a large bowl.
  4. Add cucumbers, cherry tomatoes, and red onion to the greens.
  5. In a small bowl, whisk together honey, olive oil, lemon juice, salt, and pepper for the dressing.
  6. Once sweet potatoes are done roasting, let cool slightly before adding to the salad bowl.
  7. Drizzle dressing over salad ingredients and toss gently to combine.
