  • 2 medium butternut squashes (about 2 lbs total)
  • 3 boneless, skinless chicken breasts (1.5 lbs), diced
  • 4 cloves fresh garlic, minced
  • 1/4 cup honey
  • 2 tbsp extra virgin olive oil
  • 1 tsp ground cinnamon
  • Salt and pepper to taste
  • 1/2 cup freshly grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the butternut squashes in half lengthwise and scoop out the seeds. Drizzle with olive oil and sprinkle with salt, pepper, and cinnamon.
  3. Place the squash cut-side down on a lined baking sheet and roast for 25-30 minutes until tender.
  4. While the squash roasts, heat olive oil in a skillet over medium heat. Add diced chicken seasoned with salt and pepper; cook until browned.
  5. Add minced garlic to the skillet just before removing from heat. Stir in honey and half of the Parmesan cheese.
  6. Scoop some roasted squash flesh into the chicken mixture and fill each squash half generously with this stuffing. Top with remaining Parmesan cheese.
  7. Return to the oven for an additional 10-15 minutes until heated through.
