- 2 medium butternut squashes (about 2 lbs total)
- 3 boneless, skinless chicken breasts (1.5 lbs), diced
- 4 cloves fresh garlic, minced
- 1/4 cup honey
- 2 tbsp extra virgin olive oil
- 1 tsp ground cinnamon
- Salt and pepper to taste
- 1/2 cup freshly grated Parmesan cheese
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the butternut squashes in half lengthwise and scoop out the seeds. Drizzle with olive oil and sprinkle with salt, pepper, and cinnamon.
- Place the squash cut-side down on a lined baking sheet and roast for 25-30 minutes until tender.
- While the squash roasts, heat olive oil in a skillet over medium heat. Add diced chicken seasoned with salt and pepper; cook until browned.
- Add minced garlic to the skillet just before removing from heat. Stir in honey and half of the Parmesan cheese.
- Scoop some roasted squash flesh into the chicken mixture and fill each squash half generously with this stuffing. Top with remaining Parmesan cheese.
- Return to the oven for an additional 10-15 minutes until heated through.
