  • 1 lb boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1/4 cup honey
  • 1/4 cup fresh lime juice
  • 2 ripe avocados, mashed
  • 1 cup jasmine rice (uncooked)
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper, to taste
  • 1 tbsp olive oil

Instructions

  1. In a bowl, mix honey, lime juice, minced garlic, salt, and pepper. Add chicken breasts and coat well. Let marinate for at least 30 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Cook marinated chicken for about 6-7 minutes per side until golden brown and cooked through (internal temperature of 165°F).
  3. Cook jasmine rice according to package instructions. After cooking, fold in mashed avocado, lime juice, cilantro, salt, and pepper.
  4. Place avocado rice on a plate as the base. Slice cooked chicken into strips and layer them over the rice. Garnish with extra cilantro or lime wedges if desired.
