Instructions
- In a bowl, mix honey, lime juice, minced garlic, salt, and pepper. Add chicken breasts and coat well. Let marinate for at least 30 minutes.
- Heat olive oil in a skillet over medium-high heat. Cook marinated chicken for about 6-7 minutes per side until golden brown and cooked through (internal temperature of 165°F).
- Cook jasmine rice according to package instructions. After cooking, fold in mashed avocado, lime juice, cilantro, salt, and pepper.
- Place avocado rice on a plate as the base. Slice cooked chicken into strips and layer them over the rice. Garnish with extra cilantro or lime wedges if desired.
