  • 2 cups all-purpose flour
  • 1 cup unsalted butter, cold
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 cups unsweetened coconut flakes
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup semi-sweet chocolate chips
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a baking sheet.
  2. Cream together cold butter, granulated sugar, and brown sugar until light and fluffy.
  3. In a separate bowl, sift together flour, baking powder, and salt. Gradually mix into the creamed mixture until just combined.
  4. Chill dough in plastic wrap for at least 30 minutes.
  5. Scoop tablespoon-sized portions onto the baking sheet and flatten slightly. Bake for 12-15 minutes until golden brown.
  6. While cookies bake, toast coconut flakes in a skillet until golden. Combine toasted coconut with sweetened condensed milk in a saucepan over low heat for about 5-7 minutes until thickened.
  7. Once cookies are cool, spread the coconut caramel topping on each cookie and drizzle melted chocolate over them.
