  • 4 large russet potatoes
  • 1/4 cup extra virgin olive oil
  • 2 tsp dried oregano
  • 1 tsp garlic powder
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash and peel the russet potatoes, then cut them into thick wedges.
  2. Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.
