  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup heavy cream (plus extra for whipping)
  • 1 teaspoon vanilla extract

Instructions

  1. Toss quartered strawberries with 2 tablespoons of sugar and let them sit to draw out juices.
  2. Preheat the oven to 425°F (220°C). In a bowl, mix flour, baking powder, 1 tablespoon sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs.
  3. Stir in heavy cream until just combined; avoid overmixing. Turn dough onto a floured surface, knead gently, roll to about an inch thick, and cut into rounds.
