  • 1 ½ cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • 4 nori sheets
  • ½ cucumber, julienned
  • 1 ripe avocado, sliced into strips
  • 6 oz imitation crab meat (or real crab)
  • Toasted sesame seeds (for garnish)
  • Low-sodium soy sauce (for dipping)

Instructions

  1. Rinse sushi rice under cold water until clear. Cook with water according to package instructions until fluffy.
  2. Mix cooked rice with rice vinegar, sugar, and salt while warm.
  3. Prepare fillings: julienne cucumber and slice avocado. If using real crab, shred it.
  4. Lay a nori sheet on a bamboo mat, shiny side down. Wet hands and spread a thin layer of rice over the nori, leaving an inch at the top.
  5. Place cucumber, avocado, and crab in the center. Roll tightly away from you using the mat, pressing gently.
  6. Slice each roll into six pieces with a sharp knife dipped in water for clean cuts.
