- 1 (14.5 oz) can diced tomatoes with herbs
- 2 cups frozen mixed vegetables
- 3 medium potatoes, thinly sliced
- 1 cup shredded cheddar cheese
- Salt, pepper, and Italian seasoning to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet over medium heat, brown the ground beef until no longer pink. Add the diced onion and bell peppers; cook until softened.
- Stir in the canned tomatoes and frozen mixed vegetables; heat through.
- In a greased baking dish, layer half of the beef mixture followed by half of the sliced potatoes. Repeat layers, finishing with potatoes on top.
- Sprinkle shredded cheese over the top layer of potatoes.
- Cover with foil and bake for 45 minutes; remove foil during the last 15 minutes for a crispy finish.
