  • 1.5 lbs boneless, skinless chicken thighs
  • 1 cup pineapple chunks (fresh or canned)
  • 2 bell peppers (mixed colors), sliced
  • 1 medium red onion, sliced
  • 4 garlic cloves, minced
  • ¼ cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together soy sauce, brown sugar, lime juice, minced garlic, salt, and pepper.
  3. Marinate the chicken thighs in the mixture for at least 30 minutes.
  4. Spread bell peppers, onion slices, and pineapple on the baking sheet; drizzle with olive oil and season with salt.
  5. Nestle marinated chicken among the veggies and bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C).
  6. For extra caramelization, broil for an additional 3-5 minutes before serving.
