- 4 garlic cloves, minced
- ¼ cup low-sodium soy sauce
- 2 tbsp brown sugar
- 2 tbsp lime juice
- 2 tbsp olive oil
- Salt & pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together soy sauce, brown sugar, lime juice, minced garlic, salt, and pepper.
- Marinate the chicken thighs in the mixture for at least 30 minutes.
- Spread bell peppers, onion slices, and pineapple on the baking sheet; drizzle with olive oil and season with salt.
- Nestle marinated chicken among the veggies and bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C).
- For extra caramelization, broil for an additional 3-5 minutes before serving.
