  • 2 medium zucchinis (about 300g)
  • 4 oz creamy goat cheese
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh basil or oregano, chopped

Instructions

  1. Preheat the grill to medium heat.
  2. Cut zucchinis into long strips about 1/2 inch thick.
  3. In a bowl, toss zucchini strips with olive oil, salt, and pepper until evenly coated.
  4. Grill zucchini for 3-4 minutes on each side until tender and marked.
