  • 4 whole wheat pita breads
  • 1 cup cucumbers, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, thinly sliced
  • ½ cup Kalamata olives, pitted and sliced
  • 1 cup feta cheese, crumbled
  • ¼ cup fresh parsley, chopped
  • 2 tbsp lemon juice (freshly squeezed)
  • 3 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by washing vegetables. Dice cucumbers and tomatoes, slice red onion, and crumble feta.
  2. In a bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper to create the dressing.
  3. In a large bowl, combine cucumbers, tomatoes, red onion, olives, parsley, and feta; gently toss to mix.
