  • 1 lb ground beef or lamb
  • ½ cup plain breadcrumbs
  • 2 cloves garlic, minced
  • ¼ cup fresh parsley, chopped
  • 1 medium onion, diced
  • 2 tsp dried oregano
  • 1 can (28 oz) whole peeled tomatoes, crushed
  • ½ cup crumbled feta cheese
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground meat with breadcrumbs, minced garlic, chopped parsley, diced onion, dried oregano, salt, and pepper. Mix gently until just combined.
  2. Shape mixture into 1-inch meatballs and place on a parchment-lined baking sheet.
  3. Heat olive oil in a skillet over medium heat. Sear meatballs in batches until browned on all sides and cooked through.
  4. In the same skillet, add crushed tomatoes along with additional oregano and lemon juice. Simmer until thickened (about 10 minutes).
  5. Return meatballs to the sauce and stir gently to coat.
  6. Serve in bowls topped with crumbled feta cheese and more parsley alongside rice or quinoa.
