Ingredients

Scale
  • 1 lb ground chicken
  • 1/4 cup fresh parsley, chopped
  • 3 cloves garlic, minced
  • 1/2 medium red onion, finely diced
  • Zest of 1 lemon
  • 1 cup orzo pasta
  • 1 cup low-sodium chicken broth
  • 1/2 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix ground chicken, parsley, garlic, red onion, lemon zest, salt, and pepper until well combined.
  2. Form small meatballs (about 1 inch in diameter) using wet hands and place them on a parchment-lined baking sheet.
  3. Heat olive oil in a skillet over medium heat and sear the meatballs until golden brown on all sides (about 5-7 minutes). Remove from skillet.
  4. In the same skillet, cook orzo pasta in chicken broth until heated through and slightly absorbed.
  5. Return meatballs to the skillet with orzo and simmer together for an additional 3-5 minutes.
  6. Serve over the lemony orzo and garnish with crumbled feta and extra parsley.
