  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup Greek yogurt
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • 2 tsp dried oregano
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • 1 cup jasmine rice or quinoa (uncooked)
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix Greek yogurt, garlic, lemon juice, oregano, salt, and pepper. Add chicken breasts and coat evenly. Marinate for at least 30 minutes or overnight.
  2. Preheat your grill or skillet over medium-high heat. Cook marinated chicken for about 6–7 minutes per side until golden brown and cooked through (internal temperature should reach 165°F). Let it rest before slicing.
  3. Mix grated cucumber with yogurt, minced garlic, lemon juice, salt, and dill in a bowl; adjust seasoning to taste.
  4. Layer rice or quinoa in bowls; top with sliced chicken, cucumber, cherry tomatoes, red onion, and tzatziki sauce.
  5. Sprinkle feta cheese on top and serve warm pita alongside.
