Garlic Butter Steak Bites with Potatoes are a delicious fusion of tender sirloin steak and crispy roasted baby Yukon Golds, all wrapped in a rich garlic butter sauce.   • 1 lb sirloin steak, cut into bite-sized pieces
  • 1 lb baby Yukon Gold potatoes, quartered
  • 4 tbsp unsalted butter
  • 4 cloves fresh garlic, minced
  • 2 tbsp fresh rosemary, chopped (or thyme)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss quartered potatoes with olive oil, salt, and pepper in a bowl. Spread on a baking sheet and roast for 25-30 minutes until golden and crispy.
  3. Season steak bites with salt and pepper. Sear in a hot skillet over medium-high heat for 3-4 minutes per side until browned.
  4. Reduce heat, add butter and garlic to the skillet, swirling until melted and coats the steak bites.
  5. Sprinkle fresh rosemary over the steak bites before serving.
