Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.

- In another bowl, beat granulated sugar, brown sugar, and vegetable oil until smooth.
- Add eggs one at a time and mix in vanilla extract until glossy.
- Gradually combine dry ingredients into wet ingredients until a thick dough forms. Cover and chill for at least 30 minutes.
- Roll chilled dough into balls and coat each in powdered sugar.
- Place on lined baking sheets about two inches apart and bake for 10-12 minutes until edges are set but centers remain soft.
