Instructions
- Heat refried beans in a saucepan over medium heat until warm, stirring occasionally.
- In a skillet, heat olive oil over medium heat. Lightly fry each tortilla for about 30 seconds on each side until golden and pliable.
- On each tortilla, spread a spoonful of warm refried beans down the center, roll tightly, and place seam-side down on a plate.
- Drizzle salsa verde over the rolled tortillas and generously sprinkle with shredded cheese.
