  • 2 medium eggplants (about 1.5 lbs)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1/4 cup fresh basil, chopped
  • 2 large eggs
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Slice eggplants lengthwise into 1/4-inch thick strips.
  2. Sprinkle salt on eggplant slices and let sit for 30 minutes to draw out moisture.
  3. In a bowl, mix ricotta, half of the mozzarella, Parmesan, eggs, basil, salt, and pepper until smooth.
  4. Rinse eggplants and pat dry. Brush with olive oil and roast on a baking sheet for about 20 minutes until golden.
  5. Once cool, spoon filling onto each slice and roll tightly. Place seam-side down in a baking dish with marinara sauce.
  6. Cover rolls with remaining sauce and mozzarella. Bake at 375°F (190°C) for 25-30 minutes until bubbly.
