  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 1 tsp garlic powder
  • 1 tsp ground ginger
  • 2 tbsp cornstarch
  • 2 green onions (chopped for garnish)

Instructions

  1. Rinse chicken breasts under cold water and pat dry. Cut into bite-sized pieces.
  2. In a bowl, combine pineapple chunks, soy sauce, brown sugar, garlic powder, and ground ginger; stir until mixed.
  3. Place chicken pieces in the crockpot and pour the sauce mixture over them.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. For a thicker sauce, mix cornstarch with water and stir into the crockpot about 30 minutes before serving.
  6. Garnish with chopped green onions before serving.
