  • 4 cloves fresh garlic (minced)
  • 1-inch piece of fresh ginger (grated)
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 2 green onions (chopped)
  • 4 tbsp low-sodium soy sauce
  • 3 tbsp chili sauce
  • ½ cup cornstarch
  • ½ cup vegetable oil

Instructions

  1. Cut chicken breasts into bite-sized pieces and coat evenly with cornstarch.
  2. Heat vegetable oil in a large skillet over medium-high heat. Sauté garlic and ginger until fragrant.
  3. Fry the coated chicken in batches until golden brown and cooked through, about 5-7 minutes per batch.
  4. In a bowl, mix soy sauce, chili sauce, and any additional seasonings.
  5. Add bell peppers to the skillet and sauté for 2-3 minutes until tender-crisp.
  6. Return the cooked chicken to the skillet and pour in the sauce mixture; stir well and simmer for an additional minute.
