  • 1 lb thinly sliced ribeye or sirloin beef
  • 8 oz fresh cremini or button mushrooms, sliced
  • 1 medium sweet onion, sliced
  • 4 oz provolone cheese, shredded
  • 4 fresh hoagie rolls
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Thinly slice the beef against the grain. Slice the mushrooms and onions.
  2. Heat oil in a skillet over medium heat. Add sliced onions and mushrooms; cook until tender and golden (5-7 minutes).
  3. Push veggies aside, add thinly sliced beef to the skillet. Cook until browned (3-4 minutes), mixing with the veggies.
  4. Sprinkle shredded provolone over the meat mixture. Cover with a lid for 1-2 minutes until melted.
  5. Spread butter on each hoagie roll's insides; toast in another pan until golden brown.
  6. Fill each toasted roll with the cheesy beef mixture and serve hot.
