  • 1 lb flank or sirloin steak
  • 1 cup couscous
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • ½ red onion, finely chopped
  • ½ cup feta cheese, crumbled
  • Juice of 1 lemon
  • 2 tbsp extra virgin olive oil
  • Fresh herbs (parsley or mint), to taste
  • Spices (cumin or paprika), to taste

Instructions

  1. Season the steak with salt, pepper, and spices. Heat a grill pan over medium-high heat and sear the steak for 4-5 minutes on each side until browned. Let rest before slicing.
  2. In a saucepan, bring water to boil. Add couscous and olive oil; cover and remove from heat. Let sit for 5 minutes until fluffy.
  3. Dice cherry tomatoes, cucumber, and red onion; toss in a bowl with lemon juice and olive oil.
  4. Fluff couscous with a fork and portion it into bowls. Top with sliced steak and prepared veggies.
  5. Crumble feta over each bowl and garnish with fresh herbs. Drizzle any remaining dressing on top.
