  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, rinsed
  • 4 cups low-sodium vegetable broth
  • 1 cup corn kernels (fresh or frozen)
  • 2 cups tortilla chips (for topping)
  • 1 ripe avocado, sliced
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro (optional)

Instructions

  1. Dice the chicken into bite-sized pieces.
  2. In a skillet over medium heat, add olive oil and sauté diced onions until translucent; add minced garlic.
  3. Transfer the sautéed mixture to your crockpot; add chicken, diced tomatoes, black beans, corn, broth, cumin, chili powder, salt, and pepper.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Once cooked, shred the chicken in the pot using two forks until it falls apart easily.
