  • 1 lb andouille sausage, sliced
  • 1 lb boneless chicken thighs, cubed
  • 1 lb shrimp, peeled and deveined
  • 1 cup bell peppers, chopped (mixed red and green)
  • 14 oz canned diced tomatoes with green chilies
  • 1 cup long-grain white rice
  • 4 cups low-sodium chicken broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp Cajun seasoning
  • Salt and pepper to taste
  • Green onions and parsley for garnish

Instructions

  1. Sauté the chopped onion and minced garlic in a skillet over medium heat until softened (about 3-4 minutes).
  2. Add sliced sausage and cubed chicken to the skillet; cook until browned.
  3. Transfer the mixture to a crockpot. Stir in canned tomatoes, rice, broth, Cajun seasoning, bell peppers, salt, and pepper.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours until rice is tender.
  5. In the last 30 minutes of cooking, gently fold in the shrimp until they turn pink.
