  • 2 tsp Italian seasoning
  • 2 cups fresh spinach, chopped
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 tsp red pepper flakes (optional)

Instructions

  1. Prep your ingredients: Wash spinach and chop sun-dried tomatoes.
  2. Optional: Sear the chicken: Heat olive oil in a skillet over medium-high heat. Sear each chicken breast for 2-3 minutes per side until golden brown.
  3. Add everything to the crock pot: Place the seared chicken in the crock pot. Pour in heavy cream, chicken broth, garlic, Italian seasoning, sun-dried tomatoes, spinach, and red pepper flakes. Stir gently.
