  • 2 medium sweet potatoes (about 400g)
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 2 garlic cloves, minced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup rolled oats
  • 1 ripe avocado
  • Juice of 1 lime
  • 2 tbsp extra virgin olive oil (plus more for frying)
  • 1 tsp cumin powder
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Scrub sweet potatoes, poke holes with a fork, and roast until tender (about 45 minutes).
  2. In a large bowl, mash roasted sweet potatoes with chickpeas using a fork or potato masher; leave some chickpeas whole for texture.
  3. Stir in minced garlic, chopped cilantro, cumin, salt, pepper, and rolled oats until combined without over-mixing.
  4. Shape the mixture into small patties; wet your hands for easy handling.
  5. Heat olive oil in a skillet over medium heat and cook each patty for about 3-4 minutes per side until golden brown.
  6. For the creamy sauce, blend avocado with lime juice and remaining cilantro until smooth; adjust seasoning if needed.
  7. Serve patties warm with the avocado sauce.
