- 2 tbsp extra virgin olive oil (plus more for frying)
- 1 tsp cumin powder
- Salt & pepper to taste

- Preheat oven to 400°F (200°C). Scrub sweet potatoes, poke holes with a fork, and roast until tender (about 45 minutes).
- In a large bowl, mash roasted sweet potatoes with chickpeas using a fork or potato masher; leave some chickpeas whole for texture.
- Stir in minced garlic, chopped cilantro, cumin, salt, pepper, and rolled oats until combined without over-mixing.
- Shape the mixture into small patties; wet your hands for easy handling.
- Heat olive oil in a skillet over medium heat and cook each patty for about 3-4 minutes per side until golden brown.
- For the creamy sauce, blend avocado with lime juice and remaining cilantro until smooth; adjust seasoning if needed.
- Serve patties warm with the avocado sauce.
