  • 2 tbsp five-spice powder
  • 1 tsp salt
  • 1/2 cup hoisin sauce
  • 6 pancakes or steamed buns
  • 4 scallions, sliced
  • 1 cucumber, thinly sliced

Instructions

  1. Rinse the duck under cold water and pat it dry thoroughly.
  2. Rub the duck all over with five-spice powder and salt. Let it sit uncovered in the fridge overnight.
  3. Place the duck on a rack in the fridge for at least 4 hours to air-dry.
  4. Preheat your oven to 375°F (190°C). Roast the duck on a rack in a roasting pan for about 1 hour until golden brown and crispy.
  5. Let the duck rest for 15 minutes before carving. Serve with pancakes or buns, hoisin sauce, scallions, and cucumber.
