Description

  • 1 lb salmon fillets, skinless and boneless
  • 1 cup panko bread crumbs
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tbsp sriracha sauce (adjust to taste)
  • 2 tbsp fresh lime juice
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut salmon fillets into bite-sized pieces (about 2 inches).
  3. In a bowl, mix mayonnaise, sweet chili sauce, sriracha, garlic powder, lime juice, salt, and pepper until smooth.
  4. Dip each salmon piece in the mayo mixture and then roll in panko bread crumbs until evenly coated.
  5. Place on the baking sheet and bake for 12-15 minutes until golden brown and crispy.
  6. Serve hot with extra sweet chili sauce for dipping.
