Ingredients

  • 2 medium zucchinis (about 500g), chopped
  • 3 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 1 cup heavy cream (240ml)
  • ½ cup freshly grated Parmesan cheese (50g)
  • 2 tbsp extra virgin olive oil (30ml)
  • Salt and pepper to taste

Instructions

  1. Wash and chop the zucchinis into manageable pieces.
  2. Heat olive oil in a large skillet over medium heat. Add onions and garlic; sauté for about 3-4 minutes until fragrant.
  3. Add the chopped zucchini and cook for another 5-7 minutes until tender and golden brown.
  4. Pour in the heavy cream; stir well and simmer for an additional 5 minutes.
  5. Use an immersion blender to puree the mixture until smooth or leave it slightly chunky for texture.
  6. Stir in the Parmesan cheese until melted. Season with salt and pepper to taste.
