  • 9 no-boil lasagna noodles
  • 2 cups fresh spinach
  • 1 cup sliced mushrooms
  • 1 cup whole milk ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • 2 cloves minced garlic
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add sliced mushrooms and fresh spinach; cook until tender.
  3. In a bowl, combine ricotta cheese with salt, pepper, and Italian seasoning.
  4. Spread marinara sauce at the bottom of a baking dish. Layer with no-boil noodles, half of the ricotta mixture, and half of the sautéed veggies. Repeat layers.
  5. Top with shredded mozzarella and grated Parmesan.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until bubbly and golden.
