  • 1 cup panko breadcrumbs

  • 1 cup low-sodium chicken broth
  • 1 tablespoon lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Pound each chicken breast flat to about 1/2 inch thickness.
  3. Place a slice of ham and cheese on each breast; roll tightly and secure with toothpicks.
  4. Set up a breading station with flour, beaten eggs, and seasoned panko breadcrumbs. Dredge each roll in flour, then egg, then breadcrumbs.
  5. Place the rolls seam-side down in the baking dish and bake for 25 minutes until golden brown and cooked through (165°F internal temperature).
